Fish with Broccolini, Zucchini & Potato
2 Servings [1 Serving Now / 1 Serving for Leftovers Tomorrow]
300 g x eg - Basa, Blue Grenadier White Fish
3 medium [450 g] x Raw, with Skin Potato
1.5 medium [375 g] x Raw Zucchini
240 g x Raw Broccolini
4.5 tsp [22.5 g] x Olive Oil
3 tsp [15 g] x Seasoning Lemon Pepper
If possible remove fish from the fridge 15 mins before cooking to get to room temperature.
Cut potato into pieces & steam until tender.
Slice zucchini into rounds.
Trim ends of broccolini stems.
Rub a small amount of the oil into both sides of the fish. Sprinkle lemon pepper seasoning over both sides of fish.
Cook fish in a hot pan until golden & cooked through - approx. 3 mins each side. Once done, set aside, cover & rest.
Using the same pan, add remaining oil & brown steamed potato, zucchini & broccolini for approx. 3 - 5 mins. Season with salt & pepper.
When all veg is tender serve next to fish.
